Apple turnovers

INGREDIENTS

  • 4 Granny Smith apples, peeled and sliced
  • 2 tbs butter
  • 2/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbs cornstarch
  • 1 (17.25 oz) pack frozen puff pastry sheets, thawed
  • 1 egg (glaze)

INSTRUCTIONS

  1. Peel and thinly slice apples.
  2. In large skillet on medium heat, melt butter. Cook apples for 5min.
  3. Add brown sugar and cinnamon, stir and cook for 5min.  
  4. Stir in cornstarch and cook until sauce has thickened, ~5min (add water if too thick). Remove from heat and cool.
  5. Preheat oven to 400 deg F. Whisk egg for glaze. 
  6. Unfold puff pastry. Cut each square sheet into 4 smaller squares.
  7. Spoon apple mixture onto each square. Fold pastry from corner to corner into a triangle and seal edges.
  8. Place turnovers on baking sheet and brush with egg. Bake for 20-25min or until turnovers are puffed and golden. 

Thoughts
Make sure puff pastry is thawed in fridge before starting. I skipped soaking the apples in water, cut brown sugar down to 2/3 cup. Apple cooking and reducing took longer than listed, skipped adding water. Can split prep by making apple mixture ahead of time. I used a fork to crimp the turnover edges. Baking for 20min was enough. I had lots of leftover apple pie flavored apples that I ate with yogurt and in oatmeal.
