Vegetarian Chili

INGREDIENTS

  • 1/2 tbs olive oil
  • 1lb ground beef / ground beyond meat
  • 1 yellow onion, diced
  • 1/2 tsp cinnamon
  • 1/2 tsp pepper
  • 1.5 tsp salt
  • 1.5 tsp chipotle chili powder
  • 1.5 tsp garlic powder
  • 1 tbs oregano
  • 1 tbs chili powder
  • 1 tbs cumin
  • 2-2.5 cups chicken broth
  • 1 large sweet potato, 1/2 chunks
  • 2 red bell pepper, diced
  • 1 green bell pepper, diced
  • 15oz pumpkin puree
  • 15oz fire-roasted diced tomatoes
  • avocado for garnish

INSTRUCTIONS

  1. Dice onion. Heat oil in a large pot / dutch oven until hot.
  2. Saute onion and meat until softened, ~10min. Drain excess grease if necessary.
  3. Measure out spices. Prep sweet potato, dice bell peppers.
  4. Add spices to meat and onions and stir until evenly coated, ~1min.
  5. Add in chicken broth, sweet potato, bell pepper, pumpkin, and tomatoes.
  6. Simmer for 30min or until sweet potato has softened. Serve with avocado.

Thoughts
Easy to make a vegetarian recipe by subbing the beef for a meat substitute and using veggie broth. Quick to throw together and a hearty soup when it’s cold.
