Puffins (pancake muffins)

INGREDIENTS

  • 1 1/3 cup flour
  • 1 tsp baking powder, heaping
  • 1 tsp baking soda
  • Pinch salt
  • 2 tsp canola oil
  • 1 tsp vanilla
  • 1/3 cup (scant) maple syrup
  • 1 cup oat milk
  • 1/3-2/3 cup chocolate chips, optional 

INSTRUCTIONS

  1. Preheat oven to 350 deg F.
  2. Mix together flour, baking powder, baking soda, salt.
  3. Mix in canola oil, vanilla, maple syrup, milk. Batter should be a little thick
  4. Fill muffin tins until 3/4 full with batter
  5. Bake for 15min or until set.

Thoughts
Delicious and quick to put together. Don’t overfill the muffin tins so they fully cook. Optional to use cinnamon or bananas for flavoring.
