INGREDIENTS
- 1 small or 1/2 onion, diced
- 1 bell pepper, diced
- Olive oil / butter
- 1 box couscous (~3 cup when cooked)
- 2 Roma tomato, diced
- 1/2 bag frozen kale / spinach
- 1/2 can beans for protein
INSTRUCTIONS
- Chop onion and bell pepper into bite sized pieces.
- Heat pan to medium heat, add olive oil / butter, sauté onions and bell peppers until softened, ~10min.
- Prepare couscous following box instructions
- Dice Roma tomatoes, defrost frozen greens, drain and rinse beans.
- When onions and bell pepper are softened, stir in remaining vegetables and let evenly heat for ~2min.
- When couscous is prepared, stir in vegetables.
