Banana oat muffins

INGREDIENTS

  • 3/4 cup flour
  • 3/4 cup quick-cooking oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 2 egg whites
  • 1 cup (~2 medium) bananas, mashed
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup canola oil
  • 1/3-1/2 cup chocolate chips

INSTRUCTIONS

  1. In a large bowl, combine flour, oats, baking powder, baking soda, cinnamon, and nutmeg. 
  2. Mash bananas.
  3. In a small bowl, beat together egg whites, bananas, brown sugar, milk, and oil.
  4. Add banana mixture to dry ingredients, stir until just combined. Mix in chocolate chips.
  5. Preheat oven to 400 deg F. Fill muffin tins.
  6. Bake for 10-15min (mini) or 15-20min (large).

Thoughts
Nice quick snacking muffins with chewy oatmeal texture. I used 2 bananas without checking if it measured up to 1 cup. Swapped pecans for chocolate chips. Only tried baking in mini muffin form for 15min.
