INGREDIENTS
- 3/4 cup flour
- 3/4 cup quick-cooking oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp ground nutmeg
- 2 egg whites
- 1 cup (~2 medium) bananas, mashed
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup canola oil
- 1/3-1/2 cup chocolate chips
INSTRUCTIONS
- In a large bowl, combine flour, oats, baking powder, baking soda, cinnamon, and nutmeg.
- Mash bananas.
- In a small bowl, beat together egg whites, bananas, brown sugar, milk, and oil.
- Add banana mixture to dry ingredients, stir until just combined. Mix in chocolate chips.
- Preheat oven to 400 deg F. Fill muffin tins.
- Bake for 10-15min (mini) or 15-20min (large).
Thoughts
Nice quick snacking muffins with chewy oatmeal texture. I used 2 bananas without checking if it measured up to 1 cup. Swapped pecans for chocolate chips. Only tried baking in mini muffin form for 15min.
