INGREDIENTS
- 1/4 cup Dutch-process cocoa powder
- 3/4 cup sugar
- 1/2 tsp salt
- 7/8 cup flour
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1/4 neutral-tasting oil (ex: canola)
- 3/4 cup strong coffee, hot
- 1 egg, room temp
INSTRUCTIONS
- Preheat oven to 350 deg F. Grease cake / pie pan.
- Medium bowl: whisk together cocoa, sugar, salt, flour, and baking soda.
- Large bowl: sift in flour mixture.
- Medium bowl: whisk together vanilla, oil, coffee.
- Large bowl: make a well in the center, pour in coffee mixture and slowly whisk until smooth.
- Medium bowl: lightly whisk egg. Whisk into the cake mixture.
- Pour cake mixture into pan. Drop a few times to release air bubbles.
- Bake for 25-30min or until knife comes out clean.
Thoughts
I used a 9″ pie pan instead of 8″ cake pan for 25min of baking. The cake is very moist. Next time, I would double the strength of the coffee, I didn’t really taste the flavor. I halved the recipe to only make 1 cake. Super important to not use strong tasting oil like olive oil – that will be all the cake tastes like.
