Apple cider doughnuts / muffins

INGREDIENTS

Doughnuts

  • 1.5 cups apple cider
  • 2 cups flour
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp apple pie spice
  • 1/4 tsp salt
  • 2 tbs butter, melted
  • 1 egg, room temp
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup milk, room temp
  • 1 tsp vanilla

Coating

  • 2-3tbs sugar
  • 1 tsp cinnamon
  • 1 tsp apple pie spice

INSTRUCTIONS

  1. Reduce apple cider to 1/2 cup by simmering in saucepan, ~15-20min. Cool for 10min.
  2. Preheat oven to 350 deg F.
  3. Medium bowl: whisk together flour, baking soda, baking powder, cinnamon, apple pie spice, and salt.
  4. Large bowl: whisk together butter, egg, sugars, milk, and vanilla.
  5. Large bowl: add in dry mixture and apple cider. Whisk until smooth and combined.
  6. Spoon batter into the muffin tins, ~3/4 full.
  7. Bake for 20-25min until center comes out clean.
  8. Mix together coating.
  9. Cool for 2min, then dip in sugar coating.

Thoughts
Yummy muffins. Use the stewed spiced apple juice for apple cider – not the alcoholic variety or unfiltered apple juice. For the mini muffin pan, fill 3/4 full, bake at 350 deg F for 8-9 min. Apple pie spice is: 4 tsp cinnamon: 2 tsp nutmeg: 1 tsp cardamon.
