INGREDIENTS
- 2x 9″ pie crust
- 7 cups mixed berries, fresh or frozen
- 1/2 cup sugar
- 1 tbs lemon juice
- 4 tbs cornstarch
- 2 tbs butter
- 1 egg white, optional
INSTRUCTIONS
- Preheat oven to 400 deg F.
- In a large pan, simmer berries, sugar, and lemon juice for 5-10min. Stir gently and add more sugar to taste.
- Dissolve cornstarch in 1/2 cup berry juice and mix back into the pan. Stir for an additional 5 min.
- Remove from heat and add in butter.
- Pour berry mixture into pie shell. Add pie top and brush with egg white if desired.
- Bake for 40-45min. Check after 25min to make sure the crust is not browning too much.
- Cool completely before serving.
Thoughts
I used a frozen berry mix with blueberries, blackberries, raspberries, and strawberries. I ended up with slightly too much berry filling that oozed out of the pie pan but it was still delicious. Make sure to cool the pie completely before cutting to allow the filling to set.
