Recipe: using leftovers in the fridge
INGREDIENTS
- 4 carrots, thinly sliced
- 1 onion, chopped
- 1/2 jalapeno, minced
- Salt and pepper, thyme, oregano, to taste
- 5 garlic, thinly sliced
- 15.5oz can white beans
- 25oz pasta sauce
- 16oz pasta
- Breadcrumbs, for garnish
- Parmesan, for garnish
INSTRUCTIONS
- In a large pan, add olive oil. Saute carrots, onion, and jalapeno until browned. Season with salt, pepper, thyme, and oregano.
- Add in garlic and white beans, saute for a few minutes.
- Add in can of pasta sauce and simmer for 10min.
- Cook pasta until al dente.
- Mix pasta with pasta sauce and serve. Garnish with breadcrumbs and cheese.
Thoughts
Good way to whip up a simple pasta with leftovers around the house. Other veggies that would work well include bell peppers, celery, and broccoli. Other beans would suffice as well. Next time, I might use a can of tomatoes instead of store sauce, it’s too sweet.
