INGREDIENTS
1 cup oatmeal
1/2 cup shredded coconut
1/2 cup peanut butter
1/4 cup chocolate chips
1/4 cup dried cranberries
2 tbs cup honey
1 tsp vanilla extract
Optional
cinnamon
maple syrup
flax seeds
chia seeds
INSTRUCTIONS
1. Mix all of the ingredients together.
2. Refrigerate for 30min.
3. Roll into ~1tbs balls. If the mixture is too dry, add more peanut butter or honey.
Thoughts
The peanut butter that I was using wasn’t very sticky so I ended up with 12 balls and some leftover crumbs that I ate like granola. This is perfect for a filling snack and it’s easy to swap out ingredients based on the pantry stock. Make sure to add enough sticky ingredients to hold together the mixture.
Edit: I reduced the amount of honey and chocolate chips, the oatmeal balls are a smidgen too sweet. And depending on the stickiness of the peanut butter, it might need to be x1.5 for the balls to stick together.
