Vegetarian Nachos

Topped with golden melted cheese

INGREDIENTS
Nachos
2 cans beans (black, pinto, etc.)
5 roma tomatoes (1.5 beefsteaks), diced
4.5-6.75oz olives (2-3 cans)
1/2 jalapeno, minced
1 green onion, diced
8oz 4 cheese blend, shredded

Sides
Lime tortilla chips
sour cream
salsa
guacamole

INSTRUCTIONS
1. Dice tomatoes, mince jalapeno, dice green onion, and rinse beans.
2. Pre-heat oven to 350 deg F.
3. On a lined baking sheet, spread out beans.
4. On top of the beans, layer tomatoes, olives, jalapenos, and green onions.
5. Cover everything in cheese.
6. Bake for 10min or until the top is golden.
7. Serve with lime tortilla chips, sour cream, salsa, and guacamole.

Thoughts
Fast and easy to whip up. Substitute beans for ground meat for a non vegetarian version.
