INGREDIENTS
- 2-3 cups cooked rice
- 1/2 lb salmon, 1/2″ cubes
- garlic powder
- salt
- pepper
- olive oil
- 1/2 lb imitation crab, shredded
- 1/4 cup Japanese mayo
- 1 tbs sriracha / spicy chili crisp
- 2 tbs rice vinegar
- furikake
- seaweed
- avocado
- cucumbers
INSTRUCTIONS
- Cook rice. Preheat oven to 350 deg F.
- Cube salmon to 1/2″ pieces. Toss with garlic powder, salt, pepper, olive oil.
- Shred imitation crab and mix with salmon.
- In salmon mixture, add Japanese mayo and sriracha / spicy chili crisp.
- Once rice has cooked, mix with rice vinegar and spread in 9″ square baking pan.
- Cover rice with furikake, then top with salmon mixture.
- Bake for 15min (or bake for 12min, broil 2-3min). Garnish top with more Japanese mayo, sriracha / spicy chili crisp, and furikake.
- Serve with seaweed, avocado, or cucumbers.
Thoughts
Quick to throw together and filling. I used 1 cup of uncooked rice. Next time, I might use 1lb of salmon and no imitation crab, and broil at the end of baking to crisp the top. Pairs well with kimchi or pickled cucumbers
