Tomato gnocchi with burrata

INGREDIENTS

  • 8 garlic cloves
  • 1/3 cup olive oil
  • 2lb (~4 cups) cherry tomatoes
  • 1/2 cup fresh basil
  • 1/2 cup heavy cream
  • spinach
  • 2x 16oz packs of potato gnocchi
  • 2x 4oz burrata balls

INSTRUCTIONS

  1. Boil pot of salted water.
  2. Smash garlic cloves, wash tomatoes, shred basil.
  3. Heat olive oil in a large skillet on medium-low heat. Add garlic and cook until fragrant, ~3min.
  4. Increase heat to medium and add tomatoes. Season and salt and pepper. Cook, stirring occasionally until tomatoes turn jammy, ~10min.
  5. Reduce heat to medium-low. Pour in heavy cream.
  6. When the pot of water boils, add gnocchi and cook following package instructions. Save 1/2 cup pasta water when draining.
  7. Add cooked gnocchi and pasta water to the creamy tomato sauce. Toss until coated and sauce has thickened, ~2min.
  8. Remove from heat. Top with basil and chunks of burrata.

Thoughts
A few modifications, had an extra beefsteak tomato and bell pepper that I diced and added so I only used 1lb grape tomatoes. I also used mini gnocchi in 14oz packs for a total of 28oz. Delicious and fast to put together. Will try adding spinach in with the cream sauce to add more veggies, could also add some meatballs for more protein.
