Roasted salmon with herbs and wine

INGREDIENTS

  • 2-2.5lb salmon fillet
  • Salt and pepper
  • 1/4 cup olive oil
  • 2 tbs lemon juice
  • 1/2 cup scallions
  • 1/2 cup dill, minced
  • 1/2 cup parsley, minced
  • 1/4 cup white wine

INSTRUCTIONS

  1. Descale & remove skin on salmon if needed.
  2. Whisk together olive oil and lemon juice.
  3. In casserole dish, season salmon with salt and pepper. Drizzle over with olive oil mixture. Marinade at room temp for 15min.
  4. Preheat oven to 425 deg F.
  5. Chop scallions, dill, and parsley.
  6. Coat both sides of fillet with herbs. Pour wine around the fillet.
  7. Bake for 10-12min or until almost cooked in thickest area.
  8. Cover dish and rest for 10min, serve.

Thoughts
Prep rice before starting on salmon. Add a veggie side dish. Keep descaled skin and fry separately on the stove until crispy. Wine sauce adds a nice touch of acid to the salmon. I used a 1.5lb salmon and it took 10min to cook, 3-4 servings.
