Bagel breakfast casserole

INGREDIENTS

  • 1 tbs olive oil
  • 8oz breakfast sausage, remove casing
  • 2 cups whole milk
  • 3/4 cup half and half
  • Pinch cayenne
  • 8 large eggs
  • Salt and pepper
  • 1 1/3 cup spinach
  • 2 bagels, 1″ pieces
  • 1 1/3 cup provolone, shredded
  • 8oz cream cheese, 1/2″ cubes
  • 2 tbs everything bagel seasoning

INSTRUCTIONS

  1. Preheat oven to 350 deg F. Grease 9×13″ casserole dish.
  2. In a large skillet, heat olive oil. Brown sausage, ~5min, and transfer to bowl.
  3. In a large bowl, whisk together milk, half and half, cayenne, eggs, 3/4 tsp salt, 1/2 tsp pepper.
  4. Mix in sausage, spinach, bagels, 3/4 of provolone. Pour into casserole dish.
  5. Top casserole with remaining provolone, cream cheese, and everything bagel seasoning.
  6. Cover with foil and bake for 45min. Remove foil and bake until golden brown, ~another 45min. Cool 15min before serving.

Thoughts
I thought this was an okay casserole, I did forget to add in the cream cheese while making it. It is very rich tasting.
