INGREDIENTS
- 750g pork butt/shoulder, 1/4″ slices
- 2 tbs oyster sauce
- 2 tbs soy sauce
- 1 tbs sugar
- 1 tsp fish sauce
- 1 head garlic, split in half
- 1.5 tsp white pepper
- 24 cilantro steps, chopped, leaves for garnish
- 6 tbs corn starch
INSTRUCTIONS
Marinade
- Slice pork into 1/4″ bite sized slices.
- In food processor, blend white pepper, 1/2 garlic, and cilantro stems into a fine paste. Add in oyster sauce, soy sauce, sugar, and fish sauce and blend to combine.
- Season meat with marinade for 20min – 1 day.
Fried garlic and pork
- Chop 1/2 garlic evenly.
- Fill frying pan/pot with 1/2″ oil. Turn heat on high and add garlic. Turn heat to low when oil starts bubbling. Fry until garlic is golden.
- Add cornstarch to the pork and mix well.
- Fill frying pan/pot up to 1.5″ oil and heat to 375 deg F over medium high heat.
- Fry pork in batches until browned, ~2min, drain on paper towel.
- Serve with fried garlic and cilantro leaves over rice.
Thoughts
Delicious with rice. I would cut the pork into smaller bite sized pieces next time and let the meat season for longer. The pork stuck to the pan a little while frying.
