Garlic pepper pork

INGREDIENTS

  • 750g pork butt/shoulder, 1/4″ slices
  • 2 tbs oyster sauce
  • 2 tbs soy sauce
  • 1 tbs sugar
  • 1 tsp fish sauce
  • 1 head garlic, split in half
  • 1.5 tsp white pepper
  • 24 cilantro steps, chopped, leaves for garnish
  • 6 tbs corn starch

INSTRUCTIONS

Marinade

  1. Slice pork into 1/4″ bite sized slices.
  2. In food processor, blend white pepper, 1/2 garlic, and cilantro stems into a fine paste. Add in oyster sauce, soy sauce, sugar, and fish sauce and blend to combine.
  3. Season meat with marinade for 20min – 1 day.  

Fried garlic and pork

  1. Chop 1/2 garlic evenly.
  2. Fill frying pan/pot with 1/2″ oil.  Turn heat on high and add garlic. Turn heat to low when oil starts bubbling. Fry until garlic is golden.
  3. Add cornstarch to the pork and mix well.
  4. Fill frying pan/pot up to 1.5″ oil and heat to 375 deg F over medium high heat.
  5. Fry pork in batches until browned, ~2min, drain on paper towel.
  6. Serve with fried garlic and cilantro leaves over rice.  

Thoughts
Delicious with rice. I would cut the pork into smaller bite sized pieces next time and let the meat season for longer. The pork stuck to the pan a little while frying.
