Lemon Muffins with Streusel

INGREDIENTS

Streusel

  • 1/4 cup flour
  • 2 tbs sugar
  • 1/4 tsp lemon extract
  • 1 tbs butter, room temp

Muffins

  • 2 lemons zest
  • 2 eggs
  • 1/2 cup oil
  • 3/4 cup sugar
  • 1 tsp lemon extract
  • 1/2 cup buttermilk
  • 1/4 cup lemon juice
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups flour

INSTRUCTIONS

  1. Make buttermilk if necessary (1/2 cup milk: 1/2 tbs lemon juice, mix and let sit together).
  2. Preheat the oven to 375 deg F
  3. Make the streusel by rubbing butter together with dry ingredients until crumbly.
  4. Zest and juice lemons.
  5. In a large bowl, whisk together zest, eggs, oil, and sugar.
  6. Add in lemon extract, buttermilk, an lemon juice.
  7. Whisk in baking powder, baking soda, and salt.
  8. Fold in flour until just combined, batter sill be slightly lumpy.
  9. Fill muffin tins with batter, top with streusel.
  10. Bake for 20-23min or until toothpick comes out clean.
  11. Cool for 5min then enjoy.

Thoughts
Fluffy, zest, tangy, lemony muffins. I made buttermilk as I didn’t have any on hand. I also didn’t have any lemon extract which would have added lemon flavor. Next time, I would add some extract to the streusel to make it more lemony. Streusel doesn’t brown, maybe a quick broil would add more color.
