INGREDIENTS
- 2 lb shrimp, peeled & de-veined
- 4 garlic cloves, minced
- 2 tsp salt
- Olive oil
- 4 garlic cloves, sliced
- 5 tbs olive oil
- 1/2 tsp red pepper flakes
- 1/2 cup dry white wine
- 2 tbs fresh lemon juice
- 1/2 cup butter, unsalted
- parsley
- 2lb linguine
INSTRUCTIONS
- Prep shrimp and garlic. Marinate for 30min-1hr.
- In a skillet on medium heat, cook shrimp for 1min per side. Remove shrimp from heat, leave oil in the pan.
- Add in additional oil and toss in garlic and red pepper until golden.
- Add in white wine and lemon juice. Simmer for 2min until reduced in half.
- Add butter and stir for 5min.
- Add back in shrimp and cook until shrimp done, ~2min.
- Serve with linguine.
Thoughts
Scampi very buttery and quick to put together. Add lemon at the end and maybe use more wine for more sauce. Add more garlic.
