INGREDIENTS
Streusel
- 1/4 cup flour
- 2 tbs sugar
- 1/4 tsp lemon extract
- 1 tbs butter, room temp
Muffins
- 2 lemons zest
- 2 eggs
- 1/2 cup oil
- 3/4 cup sugar
- 1 tsp lemon extract
- 1/2 cup buttermilk
- 1/4 cup lemon juice
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups flour
INSTRUCTIONS
- Make buttermilk if necessary (1/2 cup milk: 1/2 tbs lemon juice, mix and let sit together).
- Preheat the oven to 375 deg F
- Make the streusel by rubbing butter together with dry ingredients until crumbly.
- Zest and juice lemons.
- In a large bowl, whisk together zest, eggs, oil, and sugar.
- Add in lemon extract, buttermilk, an lemon juice.
- Whisk in baking powder, baking soda, and salt.
- Fold in flour until just combined, batter sill be slightly lumpy.
- Fill muffin tins with batter, top with streusel.
- Bake for 20-23min or until toothpick comes out clean.
- Cool for 5min then enjoy.
Thoughts
Fluffy, zest, tangy, lemony muffins. I made buttermilk as I didn’t have any on hand. I also didn’t have any lemon extract which would have added lemon flavor. Next time, I would add some extract to the streusel to make it more lemony. Streusel doesn’t brown, maybe a quick broil would add more color.
