INGREDIENTS
- 1.25 cups flour
- 1.25 cups rolled oats
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1 tsp cardamom
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp allspice
- 10 tbs butter, room temperature
- 2/3 cup brown sugar
- 2 tbs maple syrup
- 1 egg
- 1/2 tsp vanilla
- 1/2 cup dried currants
- 1/2 cup dried apricots, diced
INSTRUCTIONS
- In a medium bowl, whisk together flour, oats, baking soda, salt, and spices.
- In a large bowl, beat together butter, sugar, and maple syrup until light and fluffy.
- In the large bowl, beat in egg and vanilla until smooth.
- Dice apricots.
- Add flour mixture to large bowl. Mix until just combined. Fold in dried fruit until well combined.
- Scoop dough in heaping 1 tbs (1.5-2tbs volume) onto baking sheets. Chill for 1 hr in the fridge or 20min in the freezer.
- Preheat oven to 350 deg F. Bake for 18-20min or until edges are golden and center has set. Cool for 10min before transferring.
Thoughts
Delicious oatmeal cookies with fruit chunks and well spiced. They have a nice chewy texture. I baked the first batch for 18min to get them nice and golden straight from the fridge chilling. For the second batch, I let the tray with cookies cool 10min, then baked the room temp tray for 15min, dough still came from the fridge chilled. I want to try swapping the currants for chocolate chips and cutting the brown sugar in half.
Tried with 1/4 cup semi-sweet chocolate chips & 1/4 cup golden raisins instead of 1/2 cup currants (out of currents) – still a delicious combo.
