Maple sweet potato chicken meatballs

INGREDIENTS

Meatballs

  • 1 cup grated sweet potato
  • 1 tsp olive oil
  • 2/3 cup (~1/2) onion, diced 
  • 6oz spinach
  • 1/4 cup water
  • 3 cloves garlic, minced
  • 1 lb ground chicken
  • 1 tbs maple syrup
  • 1 tsp soy sauce
  • 1/2 tsp cinnamon
  • 1/4 tsp sage
  • Pinch nutmeg
  • 1/8 tsp salt
  • Pepper to taste

Glaze

  • 1/4 cup maple syrup
  • 1/4 cup chicken broth
  • 1 tbs soy sauce
  • 1 tbs cornstarch
  • 1/8 tsp cayenne

INSTRUCTIONS

  1. Preheat oven to 425 deg F. Poke holes in sweet potato with fork, wrap in foil and bake for 25-35min or until starting to soften.
  2. Dice onion, mince garlic.
  3. In a pan, heat olive oil and sauté onion, after 5min, add in spinach and water. Cook until onions softened, ~10min.
  4. Add in garlic for ~1min. Remove from heat.
  5. Grate sweet potato.
  6. In a large bowl, combine ground chicken, maple syrup, soy sauce, cinnamon, sage, nutmeg, salt, and pepper. Add in sweet potato, and onion mixture. Mix until combined
  7. Form 1″ meatballs and place on casserole dish / skillet.
  8. Cook meatballs at 425 deg F for 15min.
  9. Mix together maple glaze: maple syrup, chicken broth, soy sauce, cornstarch, and cayenne.
  10. Flip meatballs, coat in glaze and cook for 5min.

Thoughts
Serve with mustard to cut through the sweet maple. Paired with smashed potatoes or would go well with a pasta.
