INGREDIENTS
Meatballs
- 1 cup grated sweet potato
- 1 tsp olive oil
- 2/3 cup (~1/2) onion, diced
- 6oz spinach
- 1/4 cup water
- 3 cloves garlic, minced
- 1 lb ground chicken
- 1 tbs maple syrup
- 1 tsp soy sauce
- 1/2 tsp cinnamon
- 1/4 tsp sage
- Pinch nutmeg
- 1/8 tsp salt
- Pepper to taste
Glaze
- 1/4 cup maple syrup
- 1/4 cup chicken broth
- 1 tbs soy sauce
- 1 tbs cornstarch
- 1/8 tsp cayenne
INSTRUCTIONS
- Preheat oven to 425 deg F. Poke holes in sweet potato with fork, wrap in foil and bake for 25-35min or until starting to soften.
- Dice onion, mince garlic.
- In a pan, heat olive oil and sauté onion, after 5min, add in spinach and water. Cook until onions softened, ~10min.
- Add in garlic for ~1min. Remove from heat.
- Grate sweet potato.
- In a large bowl, combine ground chicken, maple syrup, soy sauce, cinnamon, sage, nutmeg, salt, and pepper. Add in sweet potato, and onion mixture. Mix until combined
- Form 1″ meatballs and place on casserole dish / skillet.
- Cook meatballs at 425 deg F for 15min.
- Mix together maple glaze: maple syrup, chicken broth, soy sauce, cornstarch, and cayenne.
- Flip meatballs, coat in glaze and cook for 5min.
Thoughts
Serve with mustard to cut through the sweet maple. Paired with smashed potatoes or would go well with a pasta.
