Cinnamon Rolls 2 – Deluxe version

INGREDIENTS

Flour Paste

  • 1/3 cup water
  • 1/3 cup milk
  • 3 tbs + 1 tsp flour

Dough

  • Flour paste
  • 6 tbs butter, melted
  • 3/4 cup milk
  • 2 eggs
  • 4 cups flour
  • 1 tbs yeast
  • 1/4 cup brown sugar
  • 1.75 tsp salt

Filling

  • 1.25 cups brown sugar
  • 2 tbs cornstarch
  • 2.5 tbs cinnamon
  • 1/2 tsp salt
  • 1/2 cup butter, softened

Frosting

  • 1/4 cup butter, softened
  • 2oz (57g) cream cheese, softened/room temp
  • 1 cup powdered sugar
  • 1 tbs milk
  • 1 tsp lemon juice
  • 1/2 tsp vanilla
  • Salt

INSTRUCTIONS

  1. In a saucepan over medium heat, combine the water, milk, and flour. Whisk while thickening sauce for 2-3min, there should be no lumps.
  2. Remove from heat. Add in butter, milk, and eggs. Whisk until smooth.
  3. In a large bowl, mix flour and yeast. Pour in flour paste and fold until just combined. Cover and rest dough for 20min.
  4. Add in brown sugar and salt to the dough. Knead for 10min. The dough will be very sticky but will absorb the moisture while kneading.
  5. Shape dough into a ball. Cover and let rise in an oiled bowl for 1 hr or until doubled in size. 
  6. Filling: Whisk brown sugar, corn starch, cinnamon, and salt together.
  7. Roll dough into 16×18″ rectangle.
  8. Butter rectangle with butter and evenly spread cinnamon filling. Press filling in place with rolling pin. Leave the top 1″ empty. 
  9. Roll dough into an 18″ log. Pinch the seam shut.
  10. Cut into 12 equal portions. Place on a greased 13×9″ baking pan.
  11. Cover loosely and let rise for 40-50min or until rolls touch.  
  12. Preheat oven to 350 deg F.
  13. Bake for 20-25min. Cover rolls with frosting.
  14. Frosting: beat together butter and cream cheese. Gradually add in powdered sugar. When mixture is fluffy, add in milk, lemon juice, vanilla, and salt. 

Thoughts
Soft, airy, and oh so yummy. While making the dough, it will start super sticky but by the end of the 10 min, the dough had become elastic without adding additional flour. The center of my rolls jutted out during baking but I was able to push them back in before adding the frosting. This recipe takes longer than the other cinnamon roll recipe and it’s worth the extra time.
