Roasted salmon and veggies

INGREDIENTS

  • 2 med yams
  • 1/2lb Brussel sprouts
  • Salmon
  • Salt
  • Pepper
  • Garlic powder
  • Olive oil
  • Lemon juice

INSTRUCTIONS

  1. Preheat oven to 400 deg F.
  2. Slice up yams and Brussels sprouts. Season with salt, pepper, and olive oil.
  3. Bake for 15-20min.
  4. Skin fish. Season on both sides with salt, pepper, and garlic powder. Place over roasted veggies. Splash with olive oil and lemon juice.
  5. Bake for 10-14min or until salmon flakes.

Thoughts
Next time, I will use fresh garlic for the salmon. Roast the garlic with veggies or place over the salmon to fully cook. The roasted veggies can be made of anything on hand and I want to try seasoning them with paprika / chili powder. The salmon comes out very tender and has a fast cook time.
