INGREDIENTS
- 3.25 cups flour
- 2 tsp instant yeast
- 2 tsp salt
- 1.5 cups water, cool
INSTRUCTIONS
- Whisk flour, yeast, and salt together. Add in water.
- Combine and shape dough into a ball. Cover and let rise on the counter for 2-3 hours or until dough doubles in size.
- Place dough on floured surface. Shape into desired loaf (loaves).
- Place shaped dough on baking sheet. Let rest for 45min.
- Preheat oven to 475 deg F.
- Score loaves before baking.
- Bake for 25min or until crust is golden brown.
- Cool and slice bread.
Thoughts
Excellent bread for sandwiches or to pair with soup. It keeps well refrigerated. To get a crispier crust, when placing the bread in the oven, add a pan of boiling water in the rack below. I have made a round loaf and a braided loaf. Normal flour works just as well as bread flour. The recipe has an option to let the dough rise in the fridge for 12 hours – 3 days instead of a few hours for a more robust flavor. I have not tried that.
