Artisan Bread

INGREDIENTS

  • 3.25 cups flour
  • 2 tsp instant yeast
  • 2 tsp salt
  • 1.5 cups water, cool

INSTRUCTIONS

  1. Whisk flour, yeast, and salt together. Add in water.
  2. Combine and shape dough into a ball. Cover and let rise on the counter for 2-3 hours or until dough doubles in size.
  3. Place dough on floured surface. Shape into desired loaf (loaves).
  4. Place shaped dough on baking sheet. Let rest for 45min.
  5. Preheat oven to 475 deg F.
  6. Score loaves before baking.
  7. Bake for 25min or until crust is golden brown.
  8. Cool and slice bread.

Thoughts
Excellent bread for sandwiches or to pair with soup. It keeps well refrigerated. To get a crispier crust, when placing the bread in the oven, add a pan of boiling water in the rack below. I have made a round loaf and a braided loaf. Normal flour works just as well as bread flour. The recipe has an option to let the dough rise in the fridge for 12 hours – 3 days instead of a few hours for a more robust flavor. I have not tried that.
