Oatmeal Chocolate Chip Cookies

INGREDIENTS

  • 1/2 cup butter, room temperature
  • 1/2 cup brown sugar
  • 1 egg, room temperature
  • 1/2 tbs vanilla extract
  • 1 cup flour
  • 1/2 cup oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1.5 cups chocolate chips

INSTRUCTIONS

  1. Preheat oven to 325 deg F.
  2. Cream butter and brown sugar. Fold in egg and vanilla.
  3. In large bowl, whisk flour, oats, baking powder, baking soda, and salt.
  4. Add in butter mixture and mix well.
  5. Add in the chocolate chips.
  6. Scoop 1 tbs of dough for each cookie.
  7. Bake for 18min or until lightly golden. Cookies will solidify when cooled.

Thoughts
This recipe is very heavy handed with the chocolate and the cookies have a good texture. I reduced the sugar in the recipe. In a pinch, a chopped chocolate bar can substitute for chocolate chips.

I made a batch with slightly mounded 1tbs cookies and baked for 10-14min. Made a total of 25 cookies, 12 per sheet.
