INGREDIENTS
- 1/2 cup butter, room temperature
- 1/2 cup brown sugar
- 1 egg, room temperature
- 1/2 tbs vanilla extract
- 1 cup flour
- 1/2 cup oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1.5 cups chocolate chips
INSTRUCTIONS
- Preheat oven to 325 deg F.
- Cream butter and brown sugar. Fold in egg and vanilla.
- In large bowl, whisk flour, oats, baking powder, baking soda, and salt.
- Add in butter mixture and mix well.
- Add in the chocolate chips.
- Scoop 1 tbs of dough for each cookie.
- Bake for 18min or until lightly golden. Cookies will solidify when cooled.
Thoughts
This recipe is very heavy handed with the chocolate and the cookies have a good texture. I reduced the sugar in the recipe. In a pinch, a chopped chocolate bar can substitute for chocolate chips.
I made a batch with slightly mounded 1tbs cookies and baked for 10-14min. Made a total of 25 cookies, 12 per sheet.
