Smashed potatoes with sour cream and walnut dressing

INGREDIENTS

Potatoes

  • 2lb Yukon gold potatoes / tiny yellow potatoes
  • 1/2 cup salt
  • 1/3 cup olive oil
  • Salt and pepper

Dressing

  • 1/2 cup walnuts, coarsely chopped
  • 2 anchovy fillets
  • 1/3 cup olive oil
  • 1 garlic clove, minced
  • 3 tbs golden raisins
  • 1 tbs red pepper flakes

Garnishes

  • Sour cream
  • 1 bunch herbs: parsley, dill, cilantro, basil
  • Lemon wedges

INSTRUCTIONS

  1. Preheat oven to 450 deg F.
  2. Boil potatoes in salted water for 15-25min or until fork tender. Drain and allow to steam.
  3. Smash potatoes. Season with olive oil, salt, and pepper.
  4. Bake for 35-40min until crispy and browned.
  5. In small sauce pan, heat walnuts, anchovies, and olive oil until golden brown, 6-8min.
  6. Pour sauce into bowl with garlic, raisins, and pepper flakes.
  7. Serve on plate with a sour cream base, topped with potatoes and herbs, and drizzled with the dressing. 

Thoughts
Delicious. The potatoes are a little hard to smush, next time, I would boil them for more time. To squish each potato, I ended up using a bowl with a bottom ring and put the potato in a pot to help the potatoes not slide. The mini gold potatoes work really well and smush more easily with a potato masher.
