INGREDIENTS
Salmon
- 2.25lb (6x6oz) salmon
- Salt and pepper
- 3 tbs oil
Sauce
- 3 garlic cloves, minced
- 2 tbs ginger, minced
- 2 tbs lemongrass paste / 2 lemongrass stalks
- 1.5 tbs brown sugar
- 1 tbs chili garlic paste
- 2x 16oz coconut milk
- 1 sliced red chili
- 1.5tbs fish sauce
Garnish
- 1 lime + zest
- 1 bunch coriander
- Vermicelli noodles
- Steamed spinach
INSTRUCTIONS
- Season salmon with salt and pepper.
- Heat oil in large pan on high. Sear both sides of the salmon for 30sec – 1 min on each side. The center will be raw.
- Turn down heat and allow pan to cool. Brown garlic, ginger, and lemongrass for 1 min.
- Add in brown sugar and caramelize, then add in chili paste.
- Stir in coconut milk, sliced chili, and fish sauce. Simmer for 2 min.
- Add in salmon and simmer gently for 4 min or until cooked through.
- Garnish with lime, zest, and coriander.
Thoughts
I blanched some spinach in the sauce and served or vermicelli noodles. Instead of 2 cans of coconut milk, use additional coconut water. The sauce is really flavorful. Be really careful with the salmon cook times to not over cook the fish.
