Poached coconut curry salmon

INGREDIENTS

Salmon

  • 2.25lb (6x6oz) salmon
  • Salt and pepper
  • 3 tbs oil

Sauce

  • 3 garlic cloves, minced
  • 2 tbs ginger, minced
  • 2 tbs lemongrass paste / 2 lemongrass stalks
  • 1.5 tbs brown sugar
  • 1 tbs chili garlic paste
  • 2x 16oz coconut milk 
  • 1 sliced red chili
  • 1.5tbs fish sauce

Garnish

  • 1 lime + zest
  • 1 bunch coriander
  • Vermicelli noodles
  • Steamed spinach

INSTRUCTIONS

  1. Season salmon with salt and pepper.
  2. Heat oil in large pan on high. Sear both sides of the salmon for 30sec – 1 min on each side. The center will be raw.
  3. Turn down heat and allow pan to cool. Brown garlic, ginger, and lemongrass for 1 min.
  4. Add in brown sugar and caramelize, then add in chili paste.
  5. Stir in coconut milk, sliced chili, and fish sauce. Simmer for 2 min.
  6. Add in salmon and simmer gently for 4 min or until cooked through.
  7. Garnish with lime, zest, and coriander.

Thoughts
I blanched some spinach in the sauce and served or vermicelli noodles. Instead of 2 cans of coconut milk, use additional coconut water. The sauce is really flavorful. Be really careful with the salmon cook times to not over cook the fish.
