INGREDIENTS
Seasonings
- 2 1/2 tbs chili powder
- 2 tbs ground cumin
- 2 tbs granulated sugar
- 1 tbs garlic powder
- 1 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp ground cayenne pepper
Meat Sauce
- 1 tbs olive oil
- 1 yellow onion, diced
- 1 jalapeno, seeded
- 1 lb ground beef
Soup
- 1 1/2 cups beef broth
- 15 oz. diced tomatoes
- 16 oz. red kidney beans, drained and rinsed
- 16 oz. tomato sauce
Garnishes
- Cheese
- Sour cream
- Avocado
- Green onions
INSTRUCTIONS
- Measures out seasonings in a bowl. Chop onion and jalapeno.
- In large soup pot, heat oil. Cook onion and jalapeno until brown.
- Add in beef and cook for 6min until browned. Stir in spices until well combined.
- Add in broth, tomatoes, beans, and tomato sauce. Simmer uncovered for 20-25min. Stir occasionally. Adjust pepper, salt, and cayenne as necessary.
- Rest for 10min, then serve with garnishes.
Thoughts
A hearty chili. Allow flavors to combine overnight before serving. I might add in bell peppers, corn, and fresh tomatoes for more veggies. I also cooked the onion in bacon fat for extra flavor.
