INGREDIENTS
- 2/3 cup butter, softened
- 2/3 cup brown sugar
- 2 cups cornmeal
- 1 1/3 cups all-purpose flour
- 4.5 tsp baking powder
- 1 tsp salt
- 3 large eggs
- 1 2/3 cups soy milk
- 2 jalapenos, diced and seeded
INSTRUCTIONS
- Preheat oven to 400 deg F. Grease a 9×13-inch baking dish.
- Bowl 1 (large): Cream together butter and brown sugar.
- Bowl 2: Whisk together cornmeal, flower, baking powder, and salt.
- Bowl 3: Whisk eggs and soy milk.
- Pour flour mixture and eggs into bowl 1 with butter. Add in jalapenos. Whisk until just combined.
- Pour into greased baking dish and bake for 22-25min or until golden brown.
- Cool for 10min before slicing.
Thoughts
This cornbread is moist and has just a hint of jalapeno. I would add more next time for more of a kick. I also added in 1tsp of bacon fat in addition to the butter. It reheats in the microwave well and pairs nicely with hearty soups.
