Jalapeno cornbread

INGREDIENTS

  • 2/3 cup butter, softened
  • 2/3 cup brown sugar
  • 2 cups cornmeal
  • 1 1/3 cups all-purpose flour
  • 4.5 tsp baking powder
  • 1 tsp salt
  • 3 large eggs
  • 1 2/3 cups soy milk
  • 2 jalapenos, diced and seeded

INSTRUCTIONS

  1. Preheat oven to 400 deg F. Grease a 9×13-inch baking dish.
  2. Bowl 1 (large): Cream together butter and brown sugar.
  3. Bowl 2: Whisk together cornmeal, flower, baking powder, and salt.
  4. Bowl 3: Whisk eggs and soy milk.
  5. Pour flour mixture and eggs into bowl 1 with butter. Add in jalapenos. Whisk until just combined.
  6. Pour into greased baking dish and bake for 22-25min or until golden brown.
  7. Cool for 10min before slicing. 

Thoughts
This cornbread is moist and has just a hint of jalapeno. I would add more next time for more of a kick. I also added in 1tsp of bacon fat in addition to the butter. It reheats in the microwave well and pairs nicely with hearty soups.
