Lemon pound cake muffins

INGREDIENTS

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs, room temperature
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 lemon zest
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1.75 cups flour

INSTRUCTIONS

  1. Preheat oven to 400 deg F.
  2. In a large bowl, cream together butter and sugar.
  3. Whisk in eggs, sour cream, vanilla extract, lemon extract, and lemon zest until well combined.
  4. Mix in salt and baking soda.
  5. Fold in flour until just combined.
  6. Pour batter into muffin tins. Bake until toothpick comes out clean, 18-20min.

Thoughts
I skipped the glaze. Bring out butter and eggs early to warm to room temperature. I doubled the lemon extract to 1 tsp and next time, might add lemon zest & lemon juice for even more lemon flavor. It tastes very much like lemon pound cake in muffin form.
