INGREDIENTS
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs, room temperature
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 1 lemon zest
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1.75 cups flour
INSTRUCTIONS
- Preheat oven to 400 deg F.
- In a large bowl, cream together butter and sugar.
- Whisk in eggs, sour cream, vanilla extract, lemon extract, and lemon zest until well combined.
- Mix in salt and baking soda.
- Fold in flour until just combined.
- Pour batter into muffin tins. Bake until toothpick comes out clean, 18-20min.
Thoughts
I skipped the glaze. Bring out butter and eggs early to warm to room temperature. I doubled the lemon extract to 1 tsp and next time, might add lemon zest & lemon juice for even more lemon flavor. It tastes very much like lemon pound cake in muffin form.
