Salmon with horseradish

A delicious lunch. I was just slightly impatient and started eating before finishing the plating.

INGREDIENTS
6 salmon fillets (1″ thick, ~6 ounces each)
olive oil

Marinade
1-2 garlic clove, minced
3 tbs vegetable oil
1 tbs horseradish
1 tbs soy sauce
1/4 tsp black pepper
1/2 tsp salt

Sauce
2 tbs basil (fresh), chopped
1 tbs lemon juice (fresh)
3/4 cup sour cream
1/4 cup mayonnaise
2 tbs horseradish
1 tsp soy sauce
salt and pepper to taste

INSTRUCTIONS
1. Make sure salmon is defrosted if frozen.

2. Chop basil and squeeze lemon juice.
3. Combine all sauce ingredients and salt and pepper to taste.

4. Whisk marinade ingredients together.
5. Brush marinade over both sides of the salmon.
6. Heat pans with oil on the stove until hot. Place the salmon in the pan non skin side down.
7. Cook for 3min, flip and cook for 2min. Flip so the skin is up for an extra 30sec.
8. Take off heat and serve immediately.

Thoughts
After adding the salmon to the pan, add the extra marinade to the top. Save the leftover cooking oil. It’s perfect for seasoning roasted veggies or quinoa.

Adjust the cooking time based on the thickness of the salmon. I also use less time if the salmon will be reheated and cooked further during that process.

I made this with only 2 salmon filets and the marinade is plenty seasoning without making the sauce. I just served it with horseradish on the side.
