INGREDIENTS
Cod
1 1/2 lbs cod (fresh or frozen)
6 tbsp unsalted butter, sliced
Seasoning
¼ tsp garlic powder
½ tsp salt
¼ tsp ground pepper
¾ tsp paprika
Lemon slices
Parsley or cilantro
INSTRUCTIONS
1. If using frozen cod, defrost completely
2. Mix seasoning ingredients.
3. Cover all sides of the cod with the seasoning.
4. Heat 2tbs of butter in skillet over medium-high heat.
5. Once butter melts, add cod and cook for 2min.
6. Reduce heat to medium. Flip cod, cover in remaining butter, and cook for 3-4min. The butter should be melted.
7. Garnish with lemon juice, lemon slices, and cilantro. Serve immediately.
Thoughts
This is the second time trying to cook frozen cod. The texture of the fish is just terrible after cooking. I’m not sure if it’s because the fish is overdone or that I’m not defrosting correctly.
Also, with this recipe, the middle of the fish never became warm so it seemed rather raw to me after the cooking. It’ll be good enough for a few lunches and maybe I’ll use the seasoning recipe on a different fish.
I only had half the fish but used the full amount of seasoning and ommitted the lemon and cilantro.
