Quinoa

With some onions, garlic, and celery.

INGREDIENTS
1 cup quinoa
2 cups water (or stock)

Optional
1/4 onion
3 garlic cloves
1 stalk celery
olive oil

INSTRUCTIONS
If adding extra veggies
1. Mince garlic, onion, and celery.
2. Fry for a few minutes until softened.
3. Follow steps for cooking plain quinoa below.

Plain quinoa
1. Pour quinoa into a heated pan on the stove. Fry for a 30 seconds.
2. Add in water (or stock) and bring to boil.
3. Set timer for 15min and cook at a low boil, covered. Stir a few times. Add more water if necessary.
4. Take off the heat and leave covered for 10min.
5. Fluff with a fork and serve.

Thoughts
I prefer quinoa over brown rice because it’s more filling. It’s also fine to stir while cooking unlike rice. It’s easy to spice up by adding extra veggies or using a broth to cook.
