INGREDIENTS
1 lb carrots
3 tbs rosemary
3-5 cloves garlic
olive oil
salt and pepper to taste
INSTRUCTIONS
1. Preheat oven to 425 deg F.
2. Wash and chop carrots into ~2-3″ long. Split the carrots into half or quarter lengthwise.
3. Mince the garlic, separate the rosemary from the stem.
4. In a large bowl, mix together the carrots, rosemary, and garlic. Coat generously with olive oil and season with salt and pepper to taste.
5. Cook in the oven for 25min.
Thoughts
Excellent veggie side dish for a main meal. Easy to pack as part of lunches as well. It’s a great way to use up old carrots and can cook while preparing the rest of the meal.
