INGREDIENTS
- 1 cup butter, softened
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 eggs
- 1 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2/3 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups semisweet chocolate chips
INSTRUCTIONS
- Preheat oven to 350 deg F.
- Large bowl: beat together butter, sugar, eggs, and vanilla until fluffy.
- Medium bowl: combine flour, cocoa, baking soda, and salt.
- Add flour mixture to butter mixture, mix until well blended.
- Add in chocolate chips.
- Spoon rounded 1/2 tablespoons onto the cookie sheet. Freeze baking sheet for 5min before baking.
- Bake for 10-12min or until set.
Thoughts
I froze the baking sheets for 5min to help the cookies keep their shape. The 1/2 tablespoon scoop yielded 3 batches of baking and 55 cookies. I put the cookie dough in the fridge while baking a batch. I ran out of chocolate chips so I did half white and semisweet chips. These cookies have a soft brownie like texture with extra chocolate goodness.
To freeze, roll out individual portions, place on cookie sheet, and put in freezer for 30min-1hr to firm. Remove from freezer, roll into balls, and freeze in a Ziploc bag. Freezing the portions individually ensures they do not stick together. To bake, defrost cookies in the fridge for several hours / the day before. From the fridge, bake at 350 deg F for 11min, cool for 10min. These cookies seem to freeze and bake well.
