  • 1/2 tsp sugar
  • 1.5 tsp sesame oil
  • 2.5 tsp oyster sauce
  • 1.5 tsp Chinese black vinegar

  2. Cut eggplant 1/3’s lengthwise. Cut each section into 8-10 strips.
  3. In a large bowl, combine 2qts water and white vinegar. Soak eggplant for 3min. Remove and squeeze out excess liquid.
  4. Arrange eggplant on steaming dish. Place dish in steamer. Turn heat to high and steam for 8-10min or until eggplant are translucent.
  5. Mix together sauce. Mince garlic & scallions.
  6. Heat oil in small pan until lightly smoking. Sautee garlic and scallions until golden.
  7. Remove eggplant from steamer. Top with sauce and garnish.

Thoughts
Yummy eggplant dish. Some of the eggplant were less steamed so I think it might need 12-15min. Also, instead of trying to heat the oil and add on top, I’d sautee the garlic and scallions before garnishing. I’m glad to have a steaming setup to use.
