INGREDIENTS
- 1.75 cups flour
- 1 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 2 eggs
- 15oz pumpkin puree
- 1/2 cup coconut oil, melted
- 1 tsp vanilla extract
INSTRUCTIONS
- Preheat oven to 375 deg.
- In large bowl, whisk dry ingredients together.
- In medium bowl, whisk together eggs, pumpkin, coconut oil, and vanilla.
- Pour wet ingredients into dry mixture. Stir until just combined.
- Scoop mixture into muffin tins.
- Bake for 20-22min.
Thoughts
These muffins turned out really dense. I did use 1/2 cup butter instead of coconut oil. I cut out the white sugar in the recipe.
