Pumpkin muffins

INGREDIENTS

  • 1.75 cups flour
  • 1 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 2 eggs
  • 15oz pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 375 deg.
  2. In large bowl, whisk dry ingredients together.
  3. In medium bowl, whisk together eggs, pumpkin, coconut oil, and vanilla.
  4. Pour wet ingredients into dry mixture. Stir until just combined.
  5. Scoop mixture into muffin tins. 
  6. Bake for 20-22min.

Thoughts
These muffins turned out really dense. I did use 1/2 cup butter instead of coconut oil. I cut out the white sugar in the recipe.
