Peas and corn with sausage

INGREDIENTS

  • 4 sausages, diced
  • 2 cups (12oz) frozen peas
  • 2 cups (12oz) frozen sweet corn
  • 1/2 tsp thyme
  • 2 tbs butter

INSTRUCTIONS

  1. Dice sausage.
  2. In a medium skillet, saute sausage until browned.
  3. Defrost peas and corn in the microwave.
  4. In skillet, add peas, corn, thyme, and butter. Cook 3-5min until butter is melted and everything is warmed.

Thoughts
Good way to use extra frozen peas and carrots. Sausage can be subbed with a few slices of bacon instead – fry bacon first, drain excess fat, add rest of ingredients, serve with bacon crumbled on top.
