INGREDIENTS
Mornay sauce
- 3 tbs butter
- 3 tbs flour
- 2 cups milk
- 3/4 tsp salt
- 3/4 tsp black pepper
- 3/4 cup Gruyère, shredded
Croque Monsieur
- 12 slices thick brioche / country bread
- 6 tbs butter, softened
- 6 tsp Dijon mustard
- 1.5 cup Mornay sauce
- 18 slices ham
- 3 cup Gruyère, shredded
Eggs
- 3 tbs butter
- 6 eggs
- salt and black pepper
INSTRUCTIONS
- Shred Gruyère.
- Mornay sauce: in a small saucepan over medium heat, melt butter. Add in flour and stir for 1 min. Whisk in milk, add salt and pepper.
- Simmer and whisk constantly until sauce thickens, 2min. Remove from heat and stir in Gruyère. Cool for 10min.
- Toast bread until golden on both sides (~3min/side).
- Preheat oven to 350°.
- Croque Monsieur: for each sandwich, spread 1/2 tbs butter on each slice. Flip over and spread of 1 tsp mustard and 1 tbs Mornay sauce on one slice. On top of Mornay sauce, stack 3 slices ham, 1/4 cup Gruyère, and remaining bread slice. Spread top of sandwich with 2 tbs Mornay sauce and sprinkle with Gruyère.
- Place assembled Croque Monsieur sandwiches on baking sheet and cook in the oven until cheese is melted and top is golden, 15-18 minutes. Broil for the last few minutes to get golden top.
- Eggs: In skillet, melt butter. Cook eggs until whites are set, season with salt and pepper.
- Top each sandwich with an egg and enjoy.
Thoughts
Tasty. I tripled the recipe to make 6 sandwiches. Make the sauce and eggs ahead of time, saving the sauce to make future sandwiches with and just starting on the sandwich assembling step. Used 8oz of cheese for 6 servings.
