INGREDIENTS
- 1/2lb lean ground beef
- 1/2lb ground Italian sausage
- Salt and pepper
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 tbs olive oil
- 2 tbs tomato paste
- 24oz marinara sauce
- 2 tsp dried parsley
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes
- 5 cups chicken broth, 1 cup water
- 9 lasagna noodles, broken in 1/4’s
- 2 cups fresh spinach
- 10oz ricotta cheese / cottage cheese
- 1 cup shredded mozzarella
- 1/2 cup grated parmesan cheese
- Fresh basil
INSTRUCTIONS
- In a large pot on medium heat, brown beef and sausage. Season with salt and pepper. Remove meat and drain grease.
- Dice onion and mince garlic.
- In the same large pot, heat olive oil. Sauté onion for 5min, add in garlic and cook for another minute. Add meat back in.
- Mix in tomato paste, marinara sauce, spices, and broth.
- Bring to boil. Add in lasagna noodles and cook until noodles are al dente. Mix in spinach.
- In a small bowl, mix together ricotta, mozzarella, and Parmesan.
- Serve soup in bowl with a scoop of cheese mixture and garnished with basil.
Thoughts
A hearty soup. I cooked the lasagna noodles based on the package cook time. Add more water if needed to thin down the soup.
