Lasagna soup

INGREDIENTS

  • 1/2lb lean ground beef
  • 1/2lb ground Italian sausage
  • Salt and pepper
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tbs olive oil
  • 2 tbs tomato paste
  • 24oz marinara sauce
  • 2 tsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 5 cups chicken broth, 1 cup water 
  • 9 lasagna noodles, broken in 1/4’s
  • 2 cups fresh spinach
  • 10oz ricotta cheese / cottage cheese
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan cheese
  • Fresh basil

INSTRUCTIONS

  1. In a large pot on medium heat, brown beef and sausage. Season with salt and pepper. Remove meat and drain grease.
  2. Dice onion and mince garlic.
  3. In the same large pot, heat olive oil. Sauté onion for 5min, add in garlic and cook for another minute. Add meat back in. 
  4. Mix in tomato paste, marinara sauce, spices, and broth.
  5. Bring to boil. Add in lasagna noodles and cook until noodles are al dente. Mix in spinach.
  6. In a small bowl, mix together ricotta, mozzarella, and Parmesan.
  7. Serve soup in bowl with a scoop of cheese mixture and garnished with basil.    

Thoughts
A hearty soup. I cooked the lasagna noodles based on the package cook time. Add more water if needed to thin down the soup.
