Glazed carrots and parsnips

INGREDIENTS

  • 1/8 cup olive oil
  • 1lb carrots, 1/2″ sticks
  • 1/b parsnips, 1/2″ sticks
  • 1 tsp salt
  • Black pepper
  • 1 tbs butter
  • 1 tbs thyme
  • 1.5 tbs honey

INSTRUCTIONS

  1. Heat oil in a large skillet over medium high heat.
  2. Prepare carrots and parsnips.
  3. Cook vegetables, salt, and pepper in skillet. Stir occasionally until golden, 15-20min.
  4. Reduce heat to low. Mix in butter, thyme, and honey.
