INGREDIENTS
- 40 garlic cloves
- 12 chicken thighs, skin and bone optional
- Salt and pepper
- 1/2 cup olive oil
- 10 sprigs fresh thyme
- Baguette for roasted garlic
INSTRUCTIONS
- Peel garlic. Season chicken with salt and pepper.
- Preheat oven to 350 degrees F.
- In Dutch oven, coat bottom with olive oil and heat over high heat. Brown both sides of the chicken.
- Remove from heat, add all chicken back into the Dutch oven. Add in olive oil, garlic, and thyme. Cover and bake for 1.5hr.
- Rest for 5-10min before serving.
Thoughts
Instead of a whole chicken, I used chicken thighs (a mix with and without the bone and skin). The chicken is extremely tender. I would add a baguette to smear with roasted garlic and pair with something crisp & refreshing like a side salad. Save the leftover garlic olive oil to cook with pasta or roast veggies.
