40 garlic cloves and chicken

INGREDIENTS

  • 40 garlic cloves
  • 12 chicken thighs, skin and bone optional
  • Salt and pepper
  • 1/2 cup olive oil
  • 10 sprigs fresh thyme
  • Baguette for roasted garlic

INSTRUCTIONS

  1. Peel garlic. Season chicken with salt and pepper. 
  2. Preheat oven to 350 degrees F.
  3. In Dutch oven, coat bottom with olive oil and heat over high heat. Brown both sides of the chicken.
  4. Remove from heat, add all chicken back into the Dutch oven. Add in olive oil, garlic, and thyme. Cover and bake for 1.5hr.
  5. Rest for 5-10min before serving.

Thoughts
Instead of a whole chicken, I used chicken thighs (a mix with and without the bone and skin). The chicken is extremely tender. I would add a baguette to smear with roasted garlic and pair with something crisp & refreshing like a side salad. Save the leftover garlic olive oil to cook with pasta or roast veggies.
