Apple and onion pork chops

INGREDIENTS

  • 4 tbs olive oil
  • x6 8oz pork chops with bones
  • Salt and pepper
  • 1 small red onions, thinly sliced
  • 2 medium apples (Fuji), thinly sliced & halved
  • 2 tbs sage, chopped
  • 1 tbs rosemary, chopped
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1.5 cup chicken stock
  • 2 tsp mustard

INSTRUCTIONS

  1. Heat oil in large skilled on high heat. Season pork chops with salt and pepper.
  2. Sear pork chops for 4-5min/side or until mostly done (120-135 deg F). Remove and rest on a plate.
  3. Slice onions and apples. Prepare herbs. 
  4. In the large skillet, over medium heat, sautee onions and apples for 5-15min until softened. Add in herbs, salt, and pepper.
  5. Pour in stock and mustard.
  6. Add pork chops back into the skillet moving onions and apples to the side. Cook for 3-5min or until done (145 deg F).

Thoughts
I ended up using ~5lbs of pork lion sirloin chop bone-in (4 steaks) that were very large. I served this with rice. I did not double the onions & apples – I made it with double and there was lots leftover.
