INGREDIENTS
- 4 tbs olive oil
- x6 8oz pork chops with bones
- Salt and pepper
- 1 small red onions, thinly sliced
- 2 medium apples (Fuji), thinly sliced & halved
- 2 tbs sage, chopped
- 1 tbs rosemary, chopped
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp pepper
- 1.5 cup chicken stock
- 2 tsp mustard
INSTRUCTIONS
- Heat oil in large skilled on high heat. Season pork chops with salt and pepper.
- Sear pork chops for 4-5min/side or until mostly done (120-135 deg F). Remove and rest on a plate.
- Slice onions and apples. Prepare herbs.
- In the large skillet, over medium heat, sautee onions and apples for 5-15min until softened. Add in herbs, salt, and pepper.
- Pour in stock and mustard.
- Add pork chops back into the skillet moving onions and apples to the side. Cook for 3-5min or until done (145 deg F).
Thoughts
I ended up using ~5lbs of pork lion sirloin chop bone-in (4 steaks) that were very large. I served this with rice. I did not double the onions & apples – I made it with double and there was lots leftover.
