Breakfast casserole – eggs, hash browns, sausage, bell pepper

INGREDIENTS

  • 1lb Italian sausage
  • 1 med white onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 20oz frozen diced hash browns, thawed
  • 2 cups shredded cheese
  • 6 eggs
  • 1/3 cup milk
  • 1/4 tsp black pepper
  • Avocado to garnish

INSTRUCTIONS

  1. Preheat oven to 375 deg F. Thaw hash browns.
  2. Sautee sausage until brown. Remove and drain grease.
  3. Prep onion, garlic, bell pepper.
  4. In sausage pan, sauté onion and red pepper until softened. Add in garlic and mix until fragrant.
  5. Turn off heat, mix in sausage, veggies, hash browns, and 1.5 cups cheese.
  6. Large bowl: whisk together eggs, milk, and black pepper. 
  7. Stir egg mixture into the hash mix. Pour into 9×13 pan, top with remaining cheese.
  8. Cover with aluminum foil and bake for 30min. Remove foil and bake for ~10min or until potatoes cooked through. Broil for ~3min to brown cheese. 

Thoughts
Yummy, but I wish the hash browns were more crunchy. It was not super filling, I added avocado on top while serving.
