INGREDIENTS
- 1lb Italian sausage
- 1 med white onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 20oz frozen diced hash browns, thawed
- 2 cups shredded cheese
- 6 eggs
- 1/3 cup milk
- 1/4 tsp black pepper
- Avocado to garnish
INSTRUCTIONS
- Preheat oven to 375 deg F. Thaw hash browns.
- Sautee sausage until brown. Remove and drain grease.
- Prep onion, garlic, bell pepper.
- In sausage pan, sauté onion and red pepper until softened. Add in garlic and mix until fragrant.
- Turn off heat, mix in sausage, veggies, hash browns, and 1.5 cups cheese.
- Large bowl: whisk together eggs, milk, and black pepper.
- Stir egg mixture into the hash mix. Pour into 9×13 pan, top with remaining cheese.
- Cover with aluminum foil and bake for 30min. Remove foil and bake for ~10min or until potatoes cooked through. Broil for ~3min to brown cheese.
Thoughts
Yummy, but I wish the hash browns were more crunchy. It was not super filling, I added avocado on top while serving.
