INGREDIENTS
- 2x 1lb New York Strip Steak / Ribeye / Top Sirloin (1lb per steak, 1.25″ thick)
- Vegetable oil
- 1.5 tsp salt
- 1 tsp pepper
- 2tbs butter
- 4 cloves garlic, quartered
- 2 sprig fresh rosemary
INSTRUCTIONS
- Remove steak from fridge and warm to room temperature, 1-2 hours before cooking.
- Heat pan until hot. Add enough oil to coat the bottom.
- Prepare butter, rosemary, and garlic.
- Pat steaks dry. Right before cooking, season with salt and pepper.
- Add steaks to hot pan. Sear 4min on the first side, 3-4min on the second, sear the edges ~1min per edge.
- Reduce heat to medium. Add 1tbs butter and rosemary to the pan. Spoon butter over the steak until 10 deg less than desired doneness (medium rare 130-135 deg F, stop cooking at 120-125 deg F).
- Add garlic when there is ~1min left to cook.
- Serve immediately with extra butter sauce on top.
Thoughts
Delicious when done right, I cooked 1 steak in the pan at a time. Add garlic as late as possible to not burn. Pairs well with potato & wine.
