Tortellini Soup with Sausage

INGREDIENTS

• 1/2 lb Italian sausage
• 1/2 onion, minced
• 2 garlic, minced
• 1 tsp salt
• 1 tsp pepper
• 1 tbs flour
• 24oz tomato sauce
• 9oz Tortellini
• 1/2 cup heavy cream
• 1.5 cup baby spinach

INSTRUCTIONS

1. In a large pot, over high heat, cook sausage 5-7min or until brown. Break into small pieces.
2. Add in onions, garlic, salt, and pepper. Cook until soft, ~10min. 
3. Mix in flour for 1min.
4. Add in tomato sauce. Simmer for 5 min.
5. Add in tortellini and cook until tender (use package instructions, 8-10min).
6. Mix in heavy cream and spinach. Cook for 1min.

Thoughts
This is a very thick soup. Make sure to cook the onions until soft. Use whichever tortellini flavor desired.
