Chicken Congee

INGREDIENTS

  • 1 cup white rice
  • 4 cups chicken broth
  • 4 cups water
  • 6 chicken thighs, bone & skin
  • 1″ ginger, peeled & sliced
  • Salt
  • White pepper
  • Green onions

INSTRUCTIONS

  1. Rinse rice.
  2. In a large pot, add in rice, chicken broth, water, chicken thighs.
  3. Boil, then simmer covered for 1 hour. Add more liquid if necessary. 
  4. Shred chicken and return to pot. Salt to taste.
  5. Garnish with green onions & white pepper.
