Tom Kha Gai

INGREDIENTS

  • 3 scallions (or 1/2 onion)
  • 2 garlic cloves, chopped
  • 4-6 Thai red chilies
  • 2 tbs lemongrass paste
  • 1 tbs Thai red curry paste
  • 4 cups chicken broth
  • 2 cans coconut milk
  • 1.5 tbs fish sauce
  • 3 tbs fresh lime juice
  • 2lb / 4 chicken thighs, chopped
  • 1 bags tofu puffs
  • Green onions for garnish
  • Cilantro for garnish

INSTRUCTIONS

  1. In a large pot, heat oil. Add onions, garlic, red chilies, lemongrass, and red curry. Cook for 5-8min or until onions are softened. Add chicken broth, simmer for 30min.
  2. Strain out aromatics. Add in coconut milk, fish sauce, chicken, and tofu puffs. Simmer until chicken is cooked through.
  3. Add in lime juice and garnishes.

Thoughts
Yummy, next time, I would double the soup and reduce the fish sauce to 1 tbs. It pairs well with noodles or rice. When I made this recipe, I added in lots of extra protein which also threw off the soup ratio.
